As the first girl, I knew what struggle was. We didn’t have much. Life was really hard.
On Sundays, it was usually our regular banga stew (ofe akwu) with rice or sometimes tomatoes stew that we always had. But the period I visited my mom’s younger sister and she made chicken curry sauce, I was mesmerized.
When I arrived at her home, saw the food menu pasted on the kitchen wall, I immediately marked my calendar, eagerly waiting for Wednesday to come, because I had little idea of how chicken curry would taste.
When the day finally arrived, I took my time watching her work. She moved with a calm confidence, measuring spices, stirring gently, and occasionally pausing to smell the aroma rising from the pot.
The way the colors came alive, the rich golden curry blending with the chicken was almost hypnotic.
By the time it was ready, trust me to take a sppon while it was still hot and just like that, I understood why this dish had such a special place in her kitchen on wednesdays.
That day, chicken curry stopped being just another meal in my mind. It became my favourite, that i couldn’t wait to return home and prepare it for my family with the money my aunty gifted me.

2. Next, cook the chicken.

Heat some oil in a large pan and add the chicken pieces. Season lightly with salt and stock cubes, then fry until golden brown on the outside. Once it’s nicely seared, remove the chicken and set it aside, this helps lock in flavor and keeps the meat juicy.
3. Fry the Base Ingredients.

In the same pan, add a little more oil if needed. Pour in the chopped onions, garlic, and ginger, and cook on medium heat until they release a rich aroma and turn slightly golden.
Then add your blended peppers and let them cook for about 8–10 minutes, stirring occasionally until the mixture thickens and reduces.
Add your curry powder and any other spices you like, such as turmeric, coriander, or chili. Stir everything well and allow the spices to fry briefly in the oil, this step deepens their flavor and gives your curry that bold aroma.
4. Now, return the chicken and add the hot dog.

Put the fried chicken back into the pan, along with the sliced hot dogs and mushrooms. Mix everything together and let it cook for about 5 minutes so the flavors begin to blend.
5. Afterward, pour in the Stock and Sweet chili sauce.

Add water, chicken stock, or coconut milk depending on how rich you want the sauce to be. Next, pour in the sweet chili sauce and stir thoroughly. Let the mixture simmer gently for about 10 minutes to allow the flavors to come together beautifully.
6. Next, thicken the sauce.

In a small bowl, combine corn flour with a few tablespoons of water to form a smooth paste. Gradually pour this into the sauce while stirring continuously. Cook for another 3–5 minutes until the curry thickens to your desired consistency.
7. Adjust the Seasoning.

Taste the sauce and adjust with a little salt, pepper, or stock cubes if needed. Add your vegetables, carrots, cabbage, and green beans (or any mix you prefer) and cook for an extra 2–3 minutes until they’re tender yet still colorful.
9. Finally, serve and enjoy.
